Perfect Pizza Masterclass: A Slice of Success for ClubsNSW Members

On April 1st, a select group of ClubsNSW members gathered at Spazio Marana in Banksmeadow for an exclusive, hands-on experience: the Perfect Pizza Masterclass, proudly presented by Marana Australia and ClubsNSW. This event was designed to support chefs and club operators preparing to compete in the exciting new Perfect Pizza category in the 2025 ClubsNSW Perfect Plate Awards.

Led by Chef Stefan Barbagallo, the session delivered a practical, in-depth look at what it really takes to create outstanding pizza — from dough to drop.

What Was Covered

The 3-hour masterclass focused on essential techniques and industry insights that turn good pizza into great pizza. Key topics included:

  • Flour & Dough Fundamentals – Understanding flour types, hydration, and fermentation.
  • Mixing & Kneading – Getting the dough structure right from the start.
  • Fermentation & Proofing – How time and temperature influence flavour and texture.
  • Stretching & Shaping – Creating a light, airy crust without compromising structure.
  • Toppings & Presentation – Balancing flavours and enhancing visual appeal.
  • Oven Techniques – Mastering temperature control and oven zones for consistent results.
  • Common Troubleshooting – Tips for dealing with shrinking dough, over-proofing, and other challenges.

The format combined hands-on pizza-making with live demonstrations using Marana Forni oven, Sunmix mixers and dough handling products , giving participants the chance to apply what they learned in real time (see full product list below).

Chef Stefan showed the students how to get an even cook and consistent product every time, regardless of skill level, made easier with Marana’s patented, perforated rotating cooking plate. He also demonstrated how to get the Neapolitan style cooking effect by using Marana’s Su & Giu (Up & Down) plate lifting system and three flame options.
